Happy Friday everyone! I am excited to share my first Comfort Food Friday post after over a year of not being active on the blog! Coditos, meaning elbows, is a popular Mexican comfort food dish that I grew up eating. Everyone has their own version of coditos which are elbow pasta cooked in a tomato base with spices. Since I was diagnosed with Ulcerative Colitis, I cut out grains, gluten, and dairy from my diet in order to help minimize my symptoms and manage my health. Lucky for me, I found an amazing brand called Jovial Foods that makes grain-free and gluten-free cassava pasta. Needless to say, when I saw they offered paleo cassava elbows, I had to give coditos a try! Vámonos and let’s get cooking!
Paleo Coditos
4-6 Servings | Paleo | Mexican Food | Gluten-Free | Grain-Free | Dairy-Free

Ingredients:
- 1 box jovial cassava pasta
- 1/2 package lean ground beef
- 1/2 onion diced
- 1/2 cup chopped cilantro
- 1 small Can tomato sauce
- 2 Tbsp tomato paste
- Salt and Pepper to taste
- 2 Tbsp Siete traditional hot sauce
- 1 tsp cumin, garlic powder, onion powder, paprika, chille powder
- Water
Optional: Garnish with more cilantro, hot sauce, and serve with avocado slices.
Directions:
- Heat up a pot to medium heat with avocado oil and then add diced onions
- Cook onions until translucent
- Add salt, pepper, cumin, garlic powder, onion powder, paprika, and chile powder to ground beef and mix adding a tsp of avocado oil as well
- Add ground beef to pot and brown the meat
- Add the box of Jovial cassava pasta to the pot and mix well with the onions and ground beef.
- Add tomato sauce, tomato paste, and enough water to cover pasta.
- Cook for about 10 minutes and stir occasionally, checking pasta for readiness.
- Note: If pasta is not stirred or is left longer than it is supposed to, it will get very mushy and easily break apart.
