Comfort Food Friday: Paleo Strawberry Milkshake and Whipped Cream

The other day I was invited to join my family for dinner at a 1950s-esque diner. If you follow me on Instagram, you know that I take my own meals to restaurants so that I can eat nutritiously and well while still having a nice time with my family, friends, and colleagues. Check out my blog post about being your own health advocate for more! Anyway, as we were finishing our meals, a waiter walked passed us to deliver an order of milkshakes to the table right next to us. My little niece’s eyes lit up as she asked her mommy (my little sister) to please order her one. Her strawberry milkshake had small chunks of fresh strawberries, whipped cream, and a cherry on top. I couldn’t help but remember how delicious strawberry milkshakes used to taste for me when I was a kid. I was determined to get experimenting in the kitchen and create a solid dairy-free alternative that was both delicious and nutrient dense. After some trial and error, I finally get to share my recipe with you all! Here’s a quick tip though, if you freeze the milkshake it will become strawberry ice cream! Double yum!

Paleo Strawberry Milkshake

Makes 16 ounces

Paleo | Dairy-Free | Refined Sugar-Free | Full Flavor

* 7-10 Frozen Strawberries
* 1/3 Cup Coconut Cream (You can place a can of coconut milk in the fridge overnight so that the cream separates from the liquid.)
* 1/2 Cup Unsweetened Coconut Water OR 1/2 Cup Coconut Milk
* 3 Medjool Dates
* 3-4 Ice Cubes
* Optional: 1 Scoop of Vital Proteins Vanilla Collagen Peptides

1. Place frozen strawberries, coconut cream, dates, ice cubes, and coconut milk/ coconut water in a blender.
2. Blend on high for a minute or so.
3. Pour and enjoy!

Paleo Whipped Cream Topping

Ingredients:                                     Directions:
* 3 Tbsp Coconut Cream * Mix together until smooth
* 1/2 to 1 tsp Coconut Milk * Use as topping or a fruit dip
* 1 tsp Raw Honey * Enjoy!
