Comfort Food Friday: Cassava Coconut Flour Tortillas

Growing up, my family always had both corn and flour tortillas on hand. Being of Mexican heritage, the tortilla was a staple in at least one of our daily meals. Needless to say, I REALLY missed eating tortillas and tacos when I decided to pursue my journey to better health. With my autoimmune disease, I decided to cut out all grains in order to minimize my chances of a flare due to the inflammation caused by grains. After some experimenting, I was able to come up with a paleo tortilla that met both requirements for great taste and texture. I have eaten these tortillas alone and more commonly use them to make tacos. Taco Tuesday, you are fair game! Vamos, let’s go make some cassava coconut flour tortillas!

Delicious Cassava Coconut Flour Tortillas

Cassava Coconut Flour Tortillas

Makes 5 tortillas


Ingredients:

1/3 Cup Cassava Flour
2 Tbsp Coconut Flour
1/2 tsp Salt
1/4 tsp Pepper
2 Tbsp Avocado Oil
1/4 Cup Water (Room Temp)


Directions:

*In a bowl, mix all dry ingredients until well incorporated
*Stir in avocado oil and mix until small clumps form
*Add in water and mix until dough forms
*Dough should not be too dry or too gooey
*Divide dough and roll into 5 balls
*On a piece of parchment paper drizzle a generous pinch of coconut flour on the area you will be working on
*Take a dough ball and flatten it out using your hands or a tortilla press
* Make sure you get the tortilla as thin as possible
*It should be the size of a corn tortilla (approximately 3 inches across)
*Place the tortilla on a pan or a comal over medium to medium high heat
*Let each side cook for 2 to 4 minutes depending on how hot your stovetop gets.
*Place tortillas in a tortilla warmer or wrap in a cloth
*Buen Provecho, Enjoy your tortillas!


These tortillas are very nutrient dense. They are also quite filling. They may seem small, but they sure mean business because of the cassava flour. Remember, YOU are worth investing in your health. Making the switch over from traditional tortillas to grain-free nutrient dense tortillas will give you a cleaner alternative and a higher nutritional payoff. With these tortillas, you can make any taco you desire. I like making fajita tacos and papa con huevo, potato and egg tacos with these tortillas. I hope you enjoy these tortillas as much as I do!
